Chinese Noodles with Broccoli

Ingredients

  • 2 t. sesame oil
  • 2 garlic cloves, minced
  • 2 T grated fresh ginger
  • 1/2 c. chicken broth
  • 3 T. hoisin sauce
  • 1/2 pkg. chinese noodles, cooked according to pkg. directions

Preparation

Step 1

Heat sesame oil in a heavy saucepan and add the garlic. Cook, stirring over medium heat until garlic is golden.
Stir in ginger and continue cooking for 5 minutes.
Stir in chicken broth, and hoisin sauce.
Bring to a boil, reduce heat and simmer 2-3 more minutes.
Serve over pasta with a sprinkling of low-sodium soy sauce and a scattering of chopped scallions or red-pepper flakes.
Add a side dish of fresh, steamed broccoli to complete dish.

NOTE: To expand the basic sauce, add strips of chicken breast with the ginger and continue cooking. Or toss in the broccoli with the broth and hoisin sauce and serve over the noodles.
