Chicken Adobo

You can substitute chicken with pork shoulder meat or a combi­nation of both.

Ingredients

  • 1 whole chicken cut up
  • 1 cup soy sauce
  • 1 cup apple cider vinegar 1 teaspoon lemon juice
  • 1/4 cup water
  • 1 tablespoon whole pepper­ corns
  • 3-4 whole bay leaves, dried
  • 1/4 cup chopped red or yellow bell peppers or 1 whole jala­peno
  • 1 medium onion, sliced
  • 5 garlic cloves, crushed
  • 1/2 teaspoon black pepper

Preparation

Step 1

In a large pot, place the cut­ up chicken with the rest of the ingredients.' Bring to a boil, reduce heat to medium and simmer for 45 minutes, cover­ ing the pot half way with the lid. Stir occasionally until sauce is thickened or reduced by half.
Serve hot with steamed rice.
