Paleo Slow Cooker Spicy BBQ Herb Rubbed Pork Butt

Ingredients

  • 4 pound pork butt
  • 2 tablespoons each of these spices: pink Himalayan sea salt, garlic powder, onion powder, paprika, black pepper and chili powder
  • 1 tablespoon of cayenne powder
  • BBQ wood chips
  • 2 cups of broth preferably bone broth
  • Hot sauce optional

Step 1

The day before mix spices in a bowl and rub the pork belly completely. Wrap in parchment paper and place in container/plastic wrap in the refrigerator over night. 20 minutes before slow cooking soak the wood chips in filtered water. Use enough chips to cover the bottom of your slow cooker. The Cuisinart multi-cooker took about 4 cups of chips to cover the bottom. Add soaked chips to slow cooker placing the pork belly on top. Add 2 cups of the bone broth setting the slow cooker 8 hours on low temperature. When slow cooking is complete removed pork belly and slice to desired serving size or using a fork to pull apart. Enjoy this mildly spicy dish full of barbecue and spice offering a slightly heated pallet with each bite.
