Mediterranean Grain Salad

Serve chilled salad as a side dish or mix in flaked tuna, grilled shrimp, grilled chicken or steak for a complete meal.

Ingredients

  • 1 cup cooked grain of choice (quinoa, rice, barley)
  • 1/4 cup red onion, diced
  • 1/2-3/4 lemon, squeezed
  • 1/4 cup kalamata olives, pitted and sliced
  • 2 Tbsp extra virgin olive oil
  • 2 cups cucumber, peeled and diced
  • 1 cup cherry tomatoes, quartered
  • 1/3 cup fresh feta cheese crumbles
  • salt and pepper to taste
  • 1 can line caught tuna, undrained or 1-2 grilled chicken breasts, diced

Preparation

Step 1

Cook grain of choice per package directions then cool. Prepare all vegetables. Add the onion, olives, cucumber, tomatoes to the cooled grain and squeeze lemon juice over it. Drizzle olive oil over the mixture, add feta, season to taste and toss well. Adjust seasoning and lemon juice if needed. Add protein of choice if desired.
