Southwest BBQ Chicken Pizza

Ingredients

  • Pizza Ingredients:
  • Dough
  • Olive Oil
  • Mozzarella
  • Cheddar (smoked)
  • Black Bean Corn Salsa
  • Chicken
  • BBQ Sauce
  • Roasted Red Peppers
  • Black Bean Corn Salsa:
  • 1 can black beans, drained and rinsed)
  • 1/2 can corn, drained and rinsed
  • 2 tablespoons chopped fresh cilantro
  • 3 tablespoons diced red onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh lime juice
  • 1 teaspoon distilled vinegar

Preparation

Step 1

Black Bean Corn Salsa:
Mix all of the ingredients together and let sit for about 30 min. or longer.

Pizza:

Brush olive oil over the pizza crust. Add the two cheeses, black bean corn salsa, chicken, BBQ sauce (drizzle) and roasted red peppers.

Bake on a preheated baking stone in the oven at 425-450 degrees for approx. 10 minutes or until lightly browned. Check pizza and turn every 2 minutes.

For Chicken: season with pepper, garlic, onion powder, red pepper flakes.

BBQ sauce: use store bought, Bull's Eye, or Sweet Baby Rays: add garlic salt, onion powder, jalapeno (if desired) to taste.
