Ingredients
- Oil, plus 1 1/2 T divided(for browning bread crumbs)
- 1 shallot (I used cooking onion)
- 3 c broth, chicken or veg.
- 1 lb asparagus
- 1 c potatoes diced
- 2 t horseradish
- 1/4 t salt
- 1 c bread cubes
- Green onions for garnish
Preparation
Step 1
Heat 1 T oil and fry onions till soft.
Add broth, asparagus, potatoes, horseradish and salt, bring to boil. Reduce heat and simmer till tender (15 min).
Purée soup.
Add rest of oil to fry pan and toast bread cubes.
Serve soup w/bread cubes and sliced onions.
