Cranberry Mold - lo-cal

Ingredients

  • 2 (3 oz.) pkg. raspberry flavored sugar-free gelatin
  • 1 (16 oz.) can whole cranberry sauce
  • 1 (8 3/4 oz.) can crushed pineapple (in juice, not syrup)
  • 2 c. diet ginger ale or diet 7-up

Preparation

Step 1

n large saucepan, combine gelatin and cranberry sauce. Heat and stir until almost boiling and gelatin is dissolved. Stir in undrained pineapple and diet soda. When fizzing has stopped, pour into 5 cup mold. Chill until set. Makes 8 servings.

If you're not counting calories, reduce soda to 1 1/2 cups and add 1/2 cup of your favorite wine.
