Ingredients
- 1 (3 lb.) broiler-fryer, skinned
- 1-1/2 cup water
- 1/4 cup chopped celery
- 1/4 cup chopped onion
- 1/4 tsp. salt
- 1 cup flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 3 Tbs. vegetable shortening
- 1/4 cup skim milk

Step 1
Disjoint chicken; place in a large dutch oven. Add water and next 3 ingredients; simmer 1 hour or until chicken is tender.
Combine flour, baking powder and salt. Cut in shortening with a pastry blender. Add milk to make stiff dough. Roll dough out to 1/8 inch thickness, cut into 1 inch dumplings.
Remove chicken from the bone; return chicken to the pan.
Bring back to a boil; add dumplings. Cover and reduce heat and simmer 8-10 minutes or until dumplings are done.
