Apple-Bacon Mac and Cheese

Ingredients

  • 6 Bacon slices
  • 3 apples, chopped
  • 1 onion, chopped
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1/4 tsp pepper
  • 2 c milk
  • 2 tsp Dijon mustard
  • 1 c shredded white cheddar cheese
  • 1 c shredded smoked Gouda cheese
  • 8 oz cooked shell macaroni

Preparation

Step 1

Chop bacon into coarse pieces, bacon until crisp, set aside.

Discard all but 1 Tbsp drippings, add apples and onion - cook 5 minutes, set side.

Melt butter in skillet, stir in flour and pepper. Add milk and cook until thickened.

Stir in mustard and both cheeses. When cheeses are melted, stir in the macaroni, apples and half the bacon.

Transfer to a baking dish - bake at 350 degrees F for 30 minutes. Top with remaining bacon.
