Ingredients

  • 4 4-ounce haddock or cod fillets
  • 1 cup all-purpose flour
  • 2 teaspoons salt
  • One -third teaspoon ground black pepper
  • 1 teaspoon ground fennel seed
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 tablespoons cornstarch
  • 3/4 cup cold lager
  • 3/4 cup cold club soda
  • Oil for frying
  • Lemon wedges and tartar sauce

Preparation

Step 1

Pat the fillets dry with paper towels and refrigerate until ready to use.
In a large mixing bowl, whisk together flour, salt, pepper, fennel seed, cayenne, baking powder, baking soda and cornstarch. Whisk in the lager, then the club soda until smooth. Keep cold until ready to use.
Heat oil in a deep fryer to 350 degrees. Dip each fillet in the batter and coat thickly. Care­fully lower into fryer and fry for 4 minutes. Remove to a pie tin lined with paper towels.
Serve immediately with lemon and tartar sauce.
