Chicken Noodle Casserole

Ingredients

  • 1 can cream of chicken soup undiluted
  • 2 tablespoons lemon juice
  • 1/2 cup Miracle Whip or Mayonnaise
  • 2 cups chicken, cooked and cubed
  • 1 small chopped onion
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped red pepper
  • 1 cup Monterey Jack Cheese shredded, divided
  • 1 cup sharp Cheddar Cheese, shredded divided
  • 12 oz medium egg noodles, cooked and drained

Preparation

Step 1

1. Preheat oven to 350 degrees
2. In a large saucepan bring water to a boil. When water is boiling add the noodles and cook for 8-9 minutes. drain.
3. Meanwhile, in a large mixing bowl, combine the Miracle Whip or Mayo, soup and lemon juice. Add the onions, peppers, chicken, 1/2 cup of Monterey Jack cheese, and 1/2 cup of Cheddar cheese, mix well. Add the noodles and toss to coat.
4. Transfer mixture to a greased 2 quart casserole baking dish. Bake, uncovered at 350 for 30 minutes. Sprinkle with remaining cheeses and bake and additional 10 minutes or until vegetables are tender and cheeses are evenly melted.
