Ingredients
- Boneless skinless chicken breasts
- Home made Guacamole
- Grated Quesa cheese
- Cheddar Cheese
- optional-chopped roasted red pepper or sun-dried peppers
- 2 Tb. olive oil
- 1 1/2 tsp. chili powder
- 1 tsp. ground cumin
- 1/2 tsp. dried oregano
- 1/2 tsp. garlic powder
- 1 tsp. sea salt
- 1/2 tsp. ground pepper
- toothpicks

Preparation
Step 1
Preheat the oven to 350 degrees F.
Line a rimmed baking sheet with foil paper.
Cut a horizontal deep pocket through the center of each chicken breast.
Place the cheeses and guacamole in a bowl and use a fork to blend.
(Mix in the chopped red peppers)
Spoon the filling inside each chicken breast and close them.
Use a toothpick to secure
Rub oil over the chicken breasts to coat.
Mix the spices, salt and pepper in a small bowl.
Sprinkle over the chicken and gently rub in.
Bake the chicken for 30-40 minutes until the juices run clear.
