  • Boneless skinless chicken breasts

  • Home made Guacamole

  • Grated Quesa cheese

  • Cheddar Cheese

  • optional-chopped roasted red pepper or sun-dried peppers

    Tb. olive oil

  • tsp. chili powder

  • 1

    tsp. ground cumin

  • ½

    tsp. dried oregano

  • ½

    tsp. garlic powder

  • 1

    tsp. sea salt

  • ½

    tsp. ground pepper

  • toothpicks


Preheat the oven to 350 degrees F. Line a rimmed baking sheet with foil paper. Cut a horizontal deep pocket through the center of each chicken breast. Place the cheeses and guacamole in a bowl and use a fork to blend. (Mix in the chopped red peppers) Spoon the filling inside each chicken breast and close them. Use a toothpick to secure Rub oil over the chicken breasts to coat. Mix the spices, salt and pepper in a small bowl. Sprinkle over the chicken and gently rub in. Bake the chicken for 30-40 minutes until the juices run clear.
