Orange-Glazed Salmon

Ingredients
- 2 (4-oz) salmon fillets
- 1 TBS maple syrup
- 1 tsp grated orange rind
- 1 tsp fresh orange juice
- 1/2 tsp Dijon mustard
- 1 clove garlic, minced
- 1/4 tsp freshly ground black pepper

Preparation
Step 1
1. Preheat broiler to high.
2. Arrange salmon fillets, skin side down, on a foil-lined baking sheet. Combine remaining 1/4 tsp salt, syrup, rind, juice, Dijon, garlic, and pepper in a bowl, stirring with a whisk. Spread orange mixture evenly over fillets.
3. Broil salmon 6 minutes or until desired degree of doneness. Serve over quinoa, cous-cous, or with a green salad.
Makes 2 servings. Each serving = 6 Weight Watchers points.
