Spinach and Bean Thread Casserole

  • 1 can chicken broth
  • 3-4 oz. pkg. bean threads (clear noodles, also called Saifun or "cellophane" noodles)
  • 1 (10 oz.) pkg. frozen spinach
  • 1/4 c. butter

Step 1

Soak bean threads in warm water 5 minutes. (Beans threads are available at most grocery stores in the ethnic foods section, and at Asian markets.) If desired, bean threads can be cut in shorter lengths with kitchen scissors or knives after soaking.
Put chicken broth in pan. Add drained bean threads. Boil until most of the liquid is absorbed by bean threads. Mix butter into bean threads. Thaw frozen spinach (or heat for a short time in microwave) until spinach pieces can be broken apart. Mix spinach pieces into the noodle mixture. Pour into casserole dish and bake 30 minutes at 350 degrees.
