Shrimp Stuffed Bell Peppers

Ingredients

  • 2 Cups Mashed Potatoes, very stiff
  • 4 Slices Bacon
  • 2 Large Onions, finely chopped
  • 6 Bell Peppers, cleaned, top removed and reserved
  • 3 Lbs. Shrimp, cooked and cleaned, chopped
  • 2 Tbs. Worcestershire Sauce
  • 1/4 tsp. Tabasco Sauce
  • 1 Egg, beaten
  • Pinch of Thyme
  • Salt & Pepper to taste
  • Paprika

Preparation

Step 1

Fry bacon until crisp, crumble and set aside. Add chopped onion, chopped bell pepper tops to drippings in pan and saute. Mix mashed potatoes, shrimp, Worcestershire sauce, Tabasco, thyme, salt & pepper and egg. Stuff peppers and sprinkle with paprika. Place in shallow baking dish with small amount of water. Bake until golden brown, about 30-40 minutes.
