Ingredients
- 2 Cups Mashed Potatoes, very stiff
- 4 Slices Bacon
- 2 Large Onions, finely chopped
- 6 Bell Peppers, cleaned, top removed and reserved
- 3 Lbs. Shrimp, cooked and cleaned, chopped
- 2 Tbs. Worcestershire Sauce
- 1/4 tsp. Tabasco Sauce
- 1 Egg, beaten
- Pinch of Thyme
- Salt & Pepper to taste
- Paprika

Preparation
Step 1
Fry bacon until crisp, crumble and set aside. Add chopped onion, chopped bell pepper tops to drippings in pan and saute. Mix mashed potatoes, shrimp, Worcestershire sauce, Tabasco, thyme, salt & pepper and egg. Stuff peppers and sprinkle with paprika. Place in shallow baking dish with small amount of water. Bake until golden brown, about 30-40 minutes.
