Ingredients

  • 4 (3 oz.) flounder fillets
  • Vegetable cooking spray
  • 1/2 cup finely chopped onion
  • 1 clove garlic, minced
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped carrot
  • 1/4 cup minced sweet red pepper
  • 2 Tbs. chopped fresh parsley, divided
  • 1/8 tsp. ground thyme
  • 1 Tbs. grated parmesan cheese
  • 1 Tbs. mayonnaise
  • 1/2 tsp. Dijon mustard
  • 1 Tbs. lemon juice

Step 1

Rinse fillets thoroughly in cold water; pat dry with paper towels. Set aside.

Coat a medium skillet with cooking spray; place over medium heat until hot. Add onion and garlic; saute until tender. Add celery, carrot and pepper; cover and cook on medium-low heat 5 minutes or until vegetables are tender, stirring occasionally. Add 1 tablespoon parsley and thyme.

Spoon mixture evenly over centers of fillets; roll up lengthwise, and secure with wooden picks. Place rolls, seam side down, in a shallow dish coated with cooking spray.

Combine cheese, mayonnaise and mustard; spread mixture evenly over rolls and sprinkle with lemon juice. Bake 400* for 20 minutes or until fish is lightly browned and flakes easily when tested with a fork. Sprinkle with remaining parsley. Serve immediately.
