Coconut Pancakes

Ingredients

  • Syrup:
  • 1/4 cup Nutiva Organic Coconut Flour
  • 1/4 cup Nutiva Organic Chocolate HempShake
  • 1/2 cup almond milk vanilla unsweetened (or coconut milk would work
  • 1/4 cup water cold, filtered
  • 1/2 tsp cinnamon
  • pinch guar gum
  • 1 Tbsp Nutiva Organic Chia Seeds
  • 1 Tbsp Nutiva Organic Coconut Manna
  • 2 Tbsp maple syrup

Preparation

Step 1

Mix all the dry ingredients for the pancakes together first. Last, add the liquid ingredients and stir really well.
Let this sit for about 5 minutes on the counter or fridge so the chia and coconut really soak up the liquid. This will help create a better batter.
Coat a nonstick skillet with the coconut oil and turn on medium high heat. Pour in the batter.
Let it cook on one side about 3-5 minutes. Flip the pancake once it firms around the edges a bit. Wait long enough though, or it will fall apart. Then, cook on the other side about 2 minutes more.
Place the pancake on a plate and in a small ramekin, mix together the coconut manna and the maple syrup. Spread this on the pancake
