Mussels in Beer Broth

Ingredients
- 2 TBS olive oil
- 1/3 cup chopped shallots
- 4 cloves of garlic, chopped
- 1 can (14.5 ounce) italian style diced tomatoes
- 1 TBS chopped thyme
- 1/2 tsp salt
- 1/4 tsp red pepper flakes
- 2 cups pale ale
- 3 pound mussels, scrubbed

Preparation
Step 1
1. Heat oil in large sauce pan. Add shallots and garlic and cook until tender.
2. Add tomatoes, thyme, salt and red pepper flakes. Add beer and bring to a boil. Add mussels, cover and reduce heat to a simmer.
3. Simmer 5-7 minutes until shells open.
