Ingredients

  • 4 Tbs. Butter
  • 4 Tbs. Flour
  • 8-10 Scallions, chopped
  • 1 Cup Milk
  • 1/2 Cup Oyster Liquid
  • 1/2 Cup White Wine
  • 1 Pint Oysters, standard
  • 1/2 tsp. Salt
  • Dash of Cayenne Pepper
  • 2 Tbs. Parsley
  • Cracker Crumbs
  • Grated Parmesan Cheese

Preparation

Step 1

Melt butter; add scallions. Add flour and blend. Add milk, oyster liquid, and wine; stir until thickened. Add oysters, salt, cayenne and parsley. Layer mixture in pie pans; add cracker crumbs to cover. Repeat layers until full; sprinkle with cheese. Bake at 350 degrees for 30 minutes. Yield: 8 servings.
