Ingredients
- 5 Quarts sliced medium cucumbers
- 6 medium white onions
- 2 green peppers chopped
- 3 cloves garlic sliced
- 1/3 cup coarse salt
- 1 1/2 teaspoon Turmeric
- 1 1/2 teaspoon Celery Seed
- 2 Tablespoons mustard seed
- 3 cups Cider Vinegar
Preparation
Step 1
In large glass or stainless steel bowl, combine cucumbers, onion, green pepper, garlic, and salt, mix well; cover with cracked ice. Let stand 3 hours; remove garlic and drain well.
In sauce pan combine sugar, vinegar, mustard seed, celery seed, and turmeric; add drained cucumber / onion / green pepper mixture and bring to a boil. Pack mixture and liquid into hot sterile pint jars, leaving 1/2 inch head space. Adjust lids. Process in boiling water bath for 7 minutes.
