SEAFOOD-Sweet and Spicy Shrimp with Rice Noodles

Ingredients

  • 1/2 tablespoon rice vinegar
  • 2 teaspoons honey
  • 1/2 tablespoon sambal oelek
  • 1/2 tablespoon lower-sodium soy sauce
  • 6 ounces peeled and deveined medium shrimp
  • 2 ounces uncooked flat rice noodles (pad thai noodles)
  • 1 tablespoon coconut or peanut oil
  • 2 tablespoons chopped cashews or peanuts
  • 1/2 tablespoon thinly sliced garlic (2 cloves)
  • 1 teaspoon chopped peeled fresh ginger
  • 1 green Thai or jalapeno chile, halved or quartered lengthwise
  • 1/2 medium onion, red or white, cut into strips or 3 or 4 shallots
  • 1 sweet pepper, cut into strips
  • 1/2 cup matchstick-cut carrot
  • 1/4 teaspoon salt
  • 1/2 cup frozen edamame, thawed
  • freshly chopped cilantro and lime wedge to garnish
  • 1/2 cup snow peas, trimmed, optional
  • 1/2 cup fresh bean sprouts, optional

Preparation

Step 1

1. Combine first 4 ingredients in a medium bowl, stirring well with a whisk. Add shrimp to vinegar mixture; toss to coat. Cover and refrigerate 30 minutes.

2. Cook noodles according to package directions, omitting salt and fat; drain. Rinse with cold water; drain again and set aside.

3. Heat wok over medium-high heat. Add 1 teaspoon oil to pan; swirl to coat. Add cashews, garlic, ginger, and halved or quartered chile to pan; stir-fry 1 minute or until garlic begins to brown. Remove cashew mixture from pan with a slotted spoon, and set aside.

4. Increase heat to high. Add 1 teaspoon oil, sweet peppers, carrot, and salt to pan; stir-fry 2 minutes. Stir in noodles, peas, if using, and edamame; cook 1 minute, tossing to mix and heat through. Add bean sprouts; if using, cook 1 minute or until thoroughly heated, tossing frequently.

5. Remove noodle mixture to bowls. Add another teaspoon of oil to the wok and cook the shrimp, stirring, with their marinade, quickly just until done.

6. Divide shrimp between bowls and top with cashew mixture, cilantro and a lime wedge.
