Fried Wonton Envelopes with Pepper Jack Cheese and Guacamole Dip

Ingredients

  • Guacamole Dip:
  • 1 (8 oz) package Monterey Jack cheese with peppers, cut into 24 pieces
  • 24 small wonton wrappers
  • vegetable cooking spray
  • vegetable oil
  • Wax Paper
  • Guacamole dip (optional)
  • 2 large ripe avocados, mashed
  • 3 T. fresh lime juice
  • 1/2 t. salt
  • 1 T. chopped fresh cilantro or 1/2 t. dried cilantro
  • 2 T. finely chopped green onions
  • 3 T. mayo
  • Combine all ingredients; cover and chill.

Preparation

Step 1

1. Place one cheese cube in center of each wonton wrapper. Moisten edges of wrapper with water. Fold corners of wrapper to center, enclosing filling and overlapping edges slightly.
2. Place wrappers on sheets of wax paper sprayed with cooking spray; cover wontons with additional wax paper to prevent drying out.
3. Pour oil to a depth of 3 inches into a Dutch oven, heat to 350. Fry wontons 3 or 4 at a time, until golden on each side turning once. Drain on paper towels. Serve immediately with guacamole dip, if desired.
