Banana Salad

Ingredients

  • 1/2 c. finely chopped pecans
  • 1/2 c. flaked coconut
  • 1/4 c. sour cream
  • 1 T. lemon juice
  • 1 T. honey
  • 2 small bananas, peeled and cut into 1-in. slices
  • 1 small red apple, unpeeled and thinly sliced
  • 1 kiwifruit, peeled and thinly sliced

Preparation

Step 1

1.Combine pecans and coconut in a shallow dish; set aside.
2.Combine sour cream, lemon juice, and honey in a small bowl; stir well.
3.Dip banana slices in sour cream mixture; roll in coconut-pecan mixture. Cover and chill 2 hours.
4.To serve, arrange apple, kiwifruit, and banana on salad plates.
