Marinated Flank Steak with Blue Cheese Sauce
Ingredients
- 8 oz beef flank steak
- 2 tablespoons olive oil
- .5 tablespoon balsamic vinegar
- .5 teaspoon brown sugar
- 1 clove garlic, minced
- 2 tablespoons crumbled blue cheese
- 2 tablespoons lowfat buttermilk
- Dash Worcestershire sauce
- .5 medium red onion
- Salt and pepper to taste

Preparation
Step 1
1. Place steak pieces in a heavy-duty plastic bag, seal, and pound to 1/4" thickness. Cut into 2 equal pieces, diagonally, against the grain.
2. In a small bowl, whisk together 1 TBS olive oil, balsamic vinegar, sugar, and garlic. Put steak into sealable plastic bag and pour marinade over. Seal bag and let sit for 30 minutes at room temperature, or 1 hour in the refrigerator.
2. Meanwhile, combine blue cheese and buttermilk with a fork, mashing until creamy. Stir in a dash of Worchestershire sauce and set aside.
3. Heat a grill pan to medium-high heat. Cut onions into 1/4" rounds and brush both sides with oil. Grill onions 6 minutes per side. Separate into rings and set aside.
4. Remove the steak from the marinade and season both sides with salt and pepper. Discard marinade. Grill steak over medium-high heat until medium-rare.
5. Arrange onions on serving plate and top with steak. Drizzle with blue cheese sauce. Serve immediately.
