Ingredients
- 1 cup cooked cracked Freekeh*
- 1 T. olive oil
- 1 small red onion finely chopped
- 1/2 cup red pepper diced
- 1 cup grated zucchini
- 1/4 chopped sun dried tomatoes
- 1/2 cup chopped mozzarella
- 1/2 chopped parsley
- 1 egg white
- 1/3 cup of Freekeh is needed for 1 cup of cooked
Preparation
Step 1
Preheat oven to 350.
Sauté onion, pepper and zucchini for 3 minutes. Add sun-dried tomatoes. Remove from heat and add mozzarella, egg white and Freekeh. Mix well.
Form patties and place in oven for 20-25 minutes.
