Chicken Enchiladas

Rolled tortillas with chicken and a creamy, cheesy tomato sauce. Easy to assemble.

Ingredients

  • 4 skinless, boneless chicken breasts
  • 1 small onion, chopped
  • 1 cup shredded Mexican Cheese
  • 1 TBSP dried parsley
  • 1/2 tsp dried oregano
  • 1 can diced tomatoes with chili's
  • diced jalapeno
  • diced tomato
  • 1 can enchilada sauce
  • 3/4 cup shredded Mexican Cheese
  • 1 jar Frontera Grill Salsa chunky

Preparation

Step 1

1. Preheat oven to 350 degrees

2. Cook chicken and shred meat. Add onion, cheese, parsley, oregano, diced tomatoes, jalapeno, tomato. Mix well.

3. Roll even amounts in the tortillas. Arrange in a 9x13 baking dish. Cover with enchilada sauce and cheese. Bake covered 15 minute. Uncover and bake an additional 10 minutes. Let stand 10 minutes before serving.
