PINEAPPLE UPSIDE DOWN CAKE

Ingredients

  • 1/4 c butter
  • 2/3 c packed brown sugar
  • 1 c sliced pineapple
  • 1 1/3 c a. p. flour
  • 1/3 c shortening
  • 3/4 c milk
  • 1 1/2 tsp. baking powder
  • 1 c sugar
  • 1/2 tsp. salt
  • 1 large egg
  • maraschino cherries as needed

Preparation

Step 1

. Sift together the dry ingredients except 2/3c brown sugar

. Combine the wet ingredients

. Melt the 1/4c of butter in the bottom of a 9x12 baking pan, place one layer of pineapple slices along the bottom of the baking pan, place a maraschino cherry in the center of each pineapple slice

. Mix the dry and wet ingredients together in thirds to for a smooth batter and pour over top of the pineapple slices, bake at 350 degrees until done, invert when cooled onto a cake board into another pan, cut into desired serving portions
