Miranda's Lasagna

Ingredients

  • 1/2 package lasagna noodles
  • 1/2 large onion, diced
  • 1/2 bell pepper, diced
  • 1/2 zucchini, diced
  • 1/2 yellow squash, diced
  • 1 portabello mushroom
  • 1-2 cloves garlic, minced
  • 1 jar spaghetti sauce
  • 2 cups shredded mozzarella cheese
  • 6 oz ricotta cheese
  • 6 ox cottage cheese
  • 1/2 cup shaved parmesan
  • 1 tablespoon chiffon basil
  • 1 tablespoon finely chopped oregano
  • 1 tablespoon chopped chives
  • salt and pepper
  • 1 package hot italian sausage (optional)

Preparation

Step 1

Preheat oven to 350F. Cook pasta until al dente. Drain, rinse in cold water, and pat dry.

If using sausage, brown it in a saute pan. Then saute vegetables in olive oil until just tender. Add spaghetti sauce and season.

Combine ricotta and cottage cheeses. Add garlic, basil, oregano, and chives. Mix thoroughly.

Cover bottom of a 9x13 inch pan with noodles. Top with half of the vegetable mixture, half of the cheese mixture, and half of the mozzarella cheese. Repeat with more noodles, and the rest of the vegetable and cheese mixtures. Top with another layer of pasta and the parmesan cheese. Bake for 45 minutes. Let rest 10 minutes before serving.
