Brocolli Casserole

I've been making this for thirty years. It's my son's request for every birthday dinner.

Ingredients

  • 1/4 cup finely chopped onion
  • 6 tablespoons butter or margarine
  • 2 tablespoons flour
  • 1/2 cup water
  • 1 jar 8oz cheese whiz
  • 2 packages 10oz each frozen chopped broccoli, drained
  • 3 each eggs, well beaten
  • 1/2 cup soda crackers, crushed

Preparation

Step 1

SAUTE onions in 4 tablespoons butter until soft. Stir in flour and water. Cook over low heat stirring until mixture thickens and comes to a boil. Blend in cheese. Combine sauce and broccoli. Add eggs and mix gently until well blended. Pour into greased 1 1/2 quart casserole. Cover with the soda crackers. Dot with the other 2 tablespoons of butter. Bake at 325 for 30 minutes.
