LEMON STRAWBERRY CAKES

Ingredients
- 1 1/2 cups flour
- 3 tblsp sugar
- 1 tblsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/2 stick melted butter
- 2 eggs
- vanilla
- 1 cup cottage cheese
- 2 tsp grated lemon zest
- strawberries
- honey

Preparation
Step 1
Whisk flour, sugar, baking powder, and salt. Whisk milk, butter, eggs and a little vanilla. Add in the cottage cheese and lemon zest. Whisk the mixture until just combined.
Ladle ¼ cupfuls onto a hot buttered skillet and cook until bubbly. Flip and cook on the bottom.
Top with strawberries and honey.
