Amaretto Yams

Wonderful for Thanksgiving.

Ingredients

  • 3 pounds yams
  • 1/2 cup hot water
  • 1 small green apple, peeled, cored, thinly sliced
  • 1/2 cup amaretto
  • 1 1/2 teaspoons cornstarch
  • 1/4 cup brown sugar
  • 2 tablespoons butter, melted
  • 1 teaspoon cinnamon

Preparation

Step 1

1. Place yams in water in a 9 inch square baking dish and cover with plastic wrap. Microwave on high for 8 minutes and let cool slightly. Fold over a corner of wrap and drain the water.

2. Remove wrap and add apples slices on top of yams.

3. Preheat oven to 350. Dissolve cornstarch in amaretto in a small bowl; stir in brown sugar, butter and cinnamon. Pour over yams and bake for 30 minutes.
