Ingredients
- 8 ounces Monterey jack cheese
- 3 cans 7oz each whole green chilies
- 10 each eggls
- 1/2 cup flour
- 1 teaspoon baking powder
- 2 cups small curd cottage cheese
- 1 large avocado, sliced
- bottled green or red taco sauce
Preparation
Step 1
CUT cheese into 1/2" thick fingers long enough to fit in side each chili. Stuff cheese into chilies and lay crosswise in a greased 9x13 pan. In a large bowl, stir together the eggs, flour, and baking powder until blended.
MIX in the cottage cheese and pour evenly over the chilies. Bake in a 350 oven for 30-35 minutes or until lightly browned on top and center feels firm. Top with avocado slices. Let stand for 15 minutes then cut into rectangles to serve.
