Ingredients
- 1 can (15 oz) black eyed peas, drained
- 1 can (11 oz) white shoe peg corn,
- drained
- 1/2 cup chopped tomato
- 2/3 cup chopped green onion
- 2/3 cup chopped cilantro
- 2 diced avacados
- Dressing;
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic
- 1 t cumin
- salt and pepper

Mix together. The longer it sits, the better. It's best with some kind of scoop chip like large fritos.
