Ingredients

  • 2 c lightly toasted pecans processed into crumbs
  • 1/3 c brown sugar
  • 3 T unsalted butter, melted
  • 2 lbs. cream cheese softened
  • 1 c brown sugar
  • 2 tsp. vanilla
  • 1 c heavy cream
  • 1 T water
  • 1 tsp. gelatin
  • Topping: 5T unsalted butter, 1/3c brown sugar, 1/3c heavy cream, 1c pecan halves

Preparation

Step 1

. Make the crust with the 2c of processed pecans, 1/3c brown sugar, 3T melted butter, and place into the cheesecake pan, pressed into bottom and onto sides

. Bloom the gelatin in 1T cold water, heat on low to dissolve the gelatin

. Cream the cream cheese, add in the brown sugar and continue creaming for 2 minutes, add the vanilla, heavy cream, gelatin mix to combine, pour into prepared cheesecake pan, wrap some foil around the pan and partially up the sides, set the cheesecake pan inside another larger pan, fill outer pan to 1/3 with hot water, place in a 350 degree oven and bake until done

. Make topping: cook together in a sauce pan, over low heat, the 5T butter, 1/3c brown sugar, 1/3c heavy cream, 1c pecan halves, pour over the top of the cheesecake after cake is done and cooled
