Tomato, Mozz and Onion Tart

Ingredients

  • 1 pie crust (9 inch)
  • 3 tablespoons olive oil
  • 1 onion, thinly sliced
  • 6 ounces skim milk mozzarella cheese, shredded
  • 1 pound plum tomato, thinly sliced

Preparation

Step 1

1. Preheat oven to 375*. Roll out dough, trim excess and place into tart pan.

2. Lightly prick bottom and sides with a fork. Bake 20 minutes with foil and weights on it. Remove weights and foil and bake for another 10 minutes.

3. Cook one onion in oil; add salt and pepper...for about 20 minutes.

4. Spread onion over bottom of tart shell and top with cheese. Arrange tomatoes slighly overlapping.

5. Sprinkle with remailing cheese. Cook another 7 minutes until the cheese is melted.
