Ingredients

  • 3 185g cans tuna
  • 3 eggs lightly beaten
  • 3 potatoes (par boiled)
  • 3-4 green onions chopped
  • 1 small grated carrot
  • dash soya sauce
  • dash sweet chili sauce
  • 3-4 TBS parsley chopped
  • 1 tsp finely grated lemon rind
  • 1 TBS finely chopped coriander
  • 1/2 cup plain flour
  • 1 cup panko bread crumbs
  • oil

Preparation

Step 1

1. Boil potatoes in salted water and mash.
2. Drain tuna and mix with all ingredients except flour and panko.
3. Shape in about 12 patties.
4. Place in fridge for about and hour.
5. Mix flour and panko and roll patties crumb mixture.
6. Fry in oil until golden brown on each side
7. Drain on paper towels.
