Slow Baked Beans

These take a long time but are definitely worth the time.

Ingredients

  • 1 package Great northern beans (about 2 cups)
  • 1/2 teaspoon baking soda
  • 1/2 pound bacon, cut up
  • 1 medium onion, diced
  • 1/2 cup brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup tomato juice
  • 1/2 teaspoon ground mustard
  • water

Preparation

Step 1

THE night before soak the beans in fresh water. In the morning add the baking soda and bring the beans to a boil. Boil for about 15 to 20 minutes to make the skins tender. Drain and rinse. Watch carefully because they may boil over.

PUT the beans in a casserole dish and add the rest of the ingredients. Bake at 325 for a couple of hours or until the beans are tender. Check occasionally and add water if needed. You may cover them but I like to let them bake for awhile first.
