Southwestern Beef and Pasta Casserole

Ingredients

  • 1 pound mini penne pasta
  • 1 pound ground beef
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 16 ounces salsa
  • 16 ounces alfredo sauce
  • 4 each eggs
  • 2 cups Mexican style shreeded cheese blend
  • 1 package frozen choped spinach (10oz), thawed and drained
  • 1 tablespoon fresh parsley

Preparation

Step 1

1. Preheat oven to 350. Cook pasta according to package directions and drain.

2. Meanwhile, coat 9" springform pan with cooking spray.

3. In large skillet over medium high heat, cook beef with seasoning and salt until browned. Stir in salsa; remove from heat.

4. In large bowl, mix alfredo sauce, eggs and 1 cup of cheese; stir in pasta.

5. In another bowl, mis spinach and 1/2 cup cheese.

6. Spoon half of pasta mixture about 4 cups into pan. Sprinkle spinach mixture even over pasta. Top with beef. Top with remaining pasta mixture. Sprinkle with
remaining 1/2 cup cheese. Bake until hot in center about 1 hour. Let stand about 10 minutes, use knife around edges of pan and remove side of pan. Sprinkle with parsley.
