Ingredients
- 1 pound uncooked peeled and deveined colossal shrimp (about 1 1/3 pounds shrimp in the shell)
- 2 tablespoons flour
- 1 tablespoon olive oil
- 5 ounces pre-sliced fresh mushrooms
- 1/2 cup chicken broth
- fresh parsley, snipped (optional)
- cooked rice
Preparation
Step 1
Rinse shrimp; pat dry with paper towels. Sprinkle flour over shrimp, shaking off excess.
Heat a large skillet over medium-high heat. Add oil and swirl to coat bottom of skillet. When oil is hot, cook shrimp for 2 minutes. Turn shrimp over.
Add mushrooms and marsala to skillet. Increase heat to high and cook for 5 to 7 minutes, stirring occasionally, until sauce has thickened to a consistency almost like melted caramels.
To serve place equal amounts of each on four rice-covered plates and top with parsley.
