Ingredients

    whole shallots peeled, minced

    garlic cloves minced

  • 1

    pound raw shrimp peeled, deveined

  • 1

    roma tomato chopped

  • 1

    teaspoon oregano

  • 4

    ounces feta cheese crumbled

  • 2

    tablespoons parsley chopped

Directions

Heat oil in a large skillet, and add shallots and garlic. Sauté until tender, about 3 minutes. Add shrimp and sauté for 2 minutes, just until shrimp turn pink. Add tomato and oregano and cook for 2 minutes more. Remove from heat and place in serving bowl. Sprinkle with feta cheese and parsley. This recipe yields 2 servings; 3 carb grams per serving.
