Refrigerator Mashed Potatoes

Ingredients

  • 5 lbs. potatoes
  • 2-3 oz. pkgs. cream cheese
  • 1 c. sour cream
  • 1/2 tsp. baking powder
  • Hot milk
  • 2 eggs
  • 2 T. butter
  • 1/4 tsp. pepper
  • Salt

Preparation

Step 1

Cook potatoes with salt as usual; drain.Mash and add hot milk until a little bit moist. Add remaining ingredients, beat until fluffy. Put into buttered casserole to cool. dot with butter and refrigerate. To serve, heat 35 to 40 minutes in 350 degree oven. Fluff with a large spoon.
