Maple Flax Banana Bread

Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup whole-wheat flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 cup flax seeds, ground
  • 1/4 cup chopped walnuts, finely chopped
  • 2 large eggs
  • 1 cup mashed bananas
  • 1/2 cup maple syrup
  • 3 tablespoons vegetable oil
  • 1/2 teaspoon vanilla

Preparation

Step 1

1. Preheat oven to 350°. Lightly grease or butter a 9X5-inch loaf pan.

2. In a bowl, stir flours with baking powder and soda, cinnamon, salt and ginger. Stir in flaxseed and nuts.

3. In another bowl, lightly beat eggs, then stir in mashed bananas, maple syrup, oil and vanilla. Pour into flour mixture and stir until mixed (don't over mix). Scrape batter into prepared pan. Smooth top. Bake in the centre of a 350° oven until a cake tester inserted in the centre comes out clean, about 50-60 minutes. Let stand 5-10 minutes in pan on a rack. Turn out on rack to cool.
