SMOKEHOUSE BACON CHICKEN CARBONARA

Ingredients

  • 1 lb. boneless, skinless chicken breasts, thinly sliced
  • 1 Tbsp. olive oil
  • 1 small onion, thinly sliced
  • 1/2 cup fresh Parmesan
  • 8 slices of Bacon, diced and crisped
  • 1 cup green peas
  • 2 Tbsp. grated Parmesan cheese

Preparation

Step 1

Season chicken, if desired, with salt and pepper.
Heat olive oil in 12 inch nonstick skillet over medium-high heat cook chicken, stirring frequently, until chicken is thoroughly cooked, about 5 minutes. Remove chicken and set aside.
Stir onion into same skillet and cook, stirring frequently, until onion is tender and golden, about 6 minutes.
Meanwhile, stirring in peas during the last 3 minutes of cook time. Stir in chicken and onion. Sprinkle with cheese.
