Peach Upside-Down French Toast
- 1/2 cup margarine
- 1 1/4 cups packed brown sugar
- 1 tbs water
- 1 (29oz) can sliced peaches
- 1 loaf unsliced French bread
- 6 beaten eggs
- 1 1/2 c milk
- 1 tbs vanilla
In a small saucepan, melt margarine. Stir in brown sugar and water. Cook, stirring constantly until mixture has thickened. Pour into a well greased 9x13 inch baking pan.
Drain peaches. Place peach slices on top of sugar mixture.
Slice French bread into 1 inch thick slices. Place bread on top of peaches, filling all gaps.
Mix eggs, milk and vanilla. Pour over bread. Cover and refrigerate overnight.
In the morning, uncover and bake at 350 degrees for 40 minutes. Cool 5 minutes. Serve slices garnished with a dollop of sour cream and fresh fruit.
