- 3 large eggs ( whites and yokes separated)
- 1/4 tsp cream of tartar
- 3 oz softened cream cheese
- 1 tablespoon coconut flour ( I use Bob Redmill Brand)

Because coconut flour is high in fiber, these buns have only 1.5 net grams of carbs per bun. This recipe makes about 4-5 buns.
Preheat oven to 350 degrees F.
Separate the eggs; place the egg yolks in one bowl and the egg whites in another bowl.
Add the cream of tartar to the egg whites and whisk until stiff peaks form (approximately 5-6 minutes with an electric mixer)
To the egg yolks, add softened cream cheese and coconut flour. Mix for about 30 seconds with an electric mixer.
Carefully fold in egg yolk mixture to the egg white mixture.
Spoon mixture onto a baking tray that has been parchment paper (about 2 tablespoons per bun) and spread out to the size of the bun you want.
Bake for 25-30 minutes or until lightly browned.
