Oatmeal Cake

Ingredients

  • Topping:
  • 1 1/4 c. boiling water
  • 1/2 c. shortening
  • 1 c. white sugar
  • 1 c. brown sugar
  • 2 eggs
  • 1 1/2 c. flour
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 tsp. soda
  • 1/2 tsp. salt
  • Raisins and nuts, optional
  • Oatmeal
  • 6 T. melted butter
  • 1/2 c. brown sugar
  • 1/4 c. cream (Milnot)
  • 1 c. coconut
  • 1/2 tsp. vanilla

Preparation

Step 1

Pour boiling water over 1 cup quick oats; stir and set aside. Cream shortening white sugar and brown sugar. Add eggs. Sift flour, cinnamon, nutmeg, soda and salt. Add oatmeal mixture to sugar mixture. Add sifted ingredients to oatmeal mixture; beat. May add raisins or nuts, if desired. Bake at 350 degrees for 45 minutes. Spread topping on cake. Brown lightly in oven or broiler.
NOTE: Alice Happ gave me this recipe in a recipe exchange many years ago. It is a lot like German chocolate. She doubles the topping for her cake. Delicious!
