pancakes - low carb gluten free

Ingredients

  • 1 cup old fashioned oats (quinoa flakes/flour)
  • 1 Cup low-fat cottage cheese
  • 1 cup egg whites (3 eggs)
  • 2 tsp baking powder
  • 2 tsp sweetener (or to taste_
  • 1/2 tsp vanilla

Preparation

Step 1

Place Old Fashioned Oats into blender and blend until they turn into a fine powder
Turn the blender off and add cottage cheese and Egg Whites
Add baking powder, sweetener (we used Stevia but you could use honey or another favorite sweetener of your choice.) Add vanilla.
Blend well.
Heat a nonstick griddle or frying pan over medium heat. Cook until browned on both sides.
Makes 8-10 large pancakes.
