Italian Sausage, Onion, and Pepper Lettuce Wraps

Ingredients

  • 1 head iceberg lettuce
  • 1/4 cup olive oil
  • 1 1/2 pounds hot Italian turkey sausage, removed from casings
  • 1 onion, chopped
  • 1 1/2 cups red and green bell pepper, chopped
  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh basil
  • Thai chili paste, to taste
  • 1/2 cup mozzarella cheese, or parmesan cheese

Preparation

Step 1

1. Cut lettuce head in half. Remove core and any limp outer leaves. Set halves aside on a serving plate.

2. Heat olive oil in a saute pan over medium-high heat. Add sausage, onion, peppers and garlic and saute until sausage is cooked through and vegetables are softened.

3. Add basil and chili paste and cook one minute longer. Place meat mixture and cheese in serving bowls.

4. To eat, spoon some meat onto a piece of lettuce, sprinkle with cheese, fold and eat taco-style. Use the smaller, crisp lettuce pieces as scoops to eat the meat.

These were good! Used sweet Italian turkey sausage, and dried basil; and served with warm flour tortillas rather than lettuce.
