LEMON ALMOND BISCOTTI

Ingredients

  • 6 T butter
  • 2/3 c sugar
  • 1/4 tsp salt
  • 1 T lemon zest
  • 1 tsp. almond extract
  • 3 T fresh squeezed lemon juice
  • 2 large eggs
  • 2 c flour
  • Glaze: 1/2c powdered sugar, 1 1/2tsp. lemon juice, 2-3 tsp. milk

Preparation

Step 1

. Cream butter and sugar together, add in eggs one at a time , add in the zest and extract, add in the dry ingredients next

. Shape dough into a half round log, wrap and rest in the refrigerator for 20 minutes

. Bake dough log on a baking sheet until golden brown, remove from oven and cool, slice dough evenly and lay pieces cut side down and bake a second time until dry (approximately 10 minutes)

. Glaze the cookies
